Oh how I wish I could claim this recipe for APPLE BROWN SUGAR COFFEE CAKE as my own, but alas, I must give credit to the great Emeril Lagasse.

This coffee cake has everything a great coffee cake should and it brought to my mind a new take on a certain poem:

Apple Brown Sugar Coffee Cake

This is a fantastic coffee cake and everything a coffee cake should be. I followed Emeril Legasse's recipe exactly except I added 1/2 teaspoon of apple pie spice. Ingredients

  • For the Cake:
  • 1 stick plus 2 teaspoons unsalted butter – room temperature
  • 1 ½ cups light brown sugar – packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon apple pie spice – optional
  • ½ teaspoon salt
  • 1 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 2 cups apples - peeled cored & chopped - Gala or Granny Smith or both
  • -----------------------------------------------------
  • For the Crumble Topping:
  • ½ cup light brown sugar – packed
  • ½ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • 4 tablespoons unsalted butter – room temperature

  • For the Brown Sugar Glaze – optional I did not use:
  • ½ cup packed light brown sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons water

Instructions

  1. For the Cake:
  2. Preheat the oven to 350F.
  3. Lightly grease with 2 teaspoons butter or spray a 13x9 inch glass baking dish.
  4. In a large mixing bowl, cream together ½ cup (1 stick) of butter and sugar until light and fluffy on medium speed – approximately 3 minutes.
  5. Beat eggs slightly, then add to the butter/sugar mixture. Mix together 1 minute on medium speed.
  6. In a separate bowl, sift the flour, baking soda, cinnamon, apple pie spice and salt.
  7. In a small bowl, combine the sour cream and vanilla extract.
  8. Add the flour mixture to the butter mixture, alternating with the sour cream/vanilla mixture. After each addition, mix just until incorporated.
  9. Fold in the apples.
  10. Pour the batter into the prepared baking dish – be sure to smooth it out to the edges of the entire pan.

  12. For the Crumble Topping:
  13. In a medium bowl, combine all topping ingredients and mix until it resembles coarse crumbs.
  14. Sprinkle the topping over the cake.
  15. Bake until golden brown and cooked through. 40-45 minutes.
  16. (When a toothpick is inserted in the center of the cake and comes out clean, the cake is done.)
  17. Remove the cake from the oven and let it cool on a wire rack for at least 10 minutes before adding the glaze and serving.

  19. For the Glaze (optional):
  20. In a small bowl, combine all glaze ingredients and mix until smooth.
  21. Drizzle the cake with the glaze and let it harden.
  22. The cake can be served warm or cold. It is delicious either way.
  23. This cake freezes beautifully.
