I found a long, lost love at the Hotel Frederick in Boonville, Missouri, two years ago.
I only wish that sentence was the beginning of a steamy love story with an amour, but alas, it is not. It does, however, pertain to Easy 7-Up Coffee Cake, and that’s as tantalizing as this story gets.
Hotel Frederick is a favorite retreat for my husband and me. It is located in Boonville, a Missouri town situated near the Katy Trail on the bluffs overlooking the Missouri River. It was built in 1905 at a cost of $40,000. After years of neglect and detours of duty from its original purpose, it was brought back to life thanks to new ownership and a four million dollar restoration. It is a museum, of sorts, full of gorgeous antiques and interesting history.
I rediscovered my long lost love, Easy 7-Up Coffee Cake, early one morning while enjoying a breakfast buffet at the hotel. With one bite of the delectable coffee cake, I was reminded of a coffee cake I had loved and made years earlier. I had lost my recipe, so after visiting with the hotel receptionist, she promised to email me theirs. True to her word, I received the recipe a couple of weeks later.

Easy 7-Up Coffee Cake
Ingredients
- For the Cake:
- 1 16.5 ounce package yellow cake mix – Duncan Hines Classic Yellow works well. *See notes
- ¾ cup canola oil
- ¾ cup 7-Up
- 1 teaspoon almond extract if using almonds or pure vanilla extract (if using pecans or other nuts)
- 4 large eggs
- 1 4 ounce package vanilla instant pudding mix

- For the Topping Mixture:
- ¾ cup dark brown sugar packed
- ¾ cup sliced almonds or chopped pecans
- 2 teaspoons ground cinnamon
Instructions
- Preheat oven to 350F.
- Spray a 9x13-inch baking pan with baking spray.

- For the cake:
- Combine cake mix, oil,7-Up, almond or vanilla, eggs and pudding mix in the bowl of electric mixer. Beat on LOW speed for 30 seconds, then beat on MED speed for 2 minutes.

- For the Topping Mixture:
- Combine brown sugar, nuts and cinnamon in a small bowl and mix well.

- To Bake:
- Pour half the batter into 9x13-inch baking pan.
- Swirl ¼ cup of topping mixture throughout the batter.
- Top with remaining batter then swirl another ¼ cup topping mixture throughout.
- Sprinkle last ¼ cup topping mixture over top of batter.
- Bake at 350F for 35-45 minutes or until a toothpick inserted in the center comes out clean.
