Cilantro Lime Honey Butter

Ingredients

  • 1/2 cup 1 stick unsalted butter - room temperature
  • 1 tablespoon honey
  • 1/2-1 chipotle pepper in adobo sauce – minced remove seeds if a milder taste is desired
  • ¼ teaspoon black pepper
  • pinch or coarse salt - if using salted butter - do not use
  • 1 tablespoon fresh lime juice
  • 1 tablespoon Vidalia or sweet yellow onion – minced
  • ¼ c fresh cilantro leaves – minced
  • ¼ teaspoon chili powder optional

Instructions

  1. Place butter in a mixing bowl and beat on med-high until lighter in color and softened.
  2. Add all other ingredients and beat until incorporated.
  3. On large piece of plastic wrap, roll the butter mixture until it forms a short log.
  4. Tightly roll it in plastic wrap and twist the ends of the plastic wrap. to seal.
  5. Refrigerate or freeze until ready to use.
  6. Makes 1/2 cup or 8 tablespoons of compound butter.
