Ingredients

  • For the Meatloaf:
  • 2 tablespoons butter unsalted
  • 2 tablespoons canola oil
  • ½ sweet yellow onion finely chopped
  • ½ cup milk
  • 2 tablespoons ketchup or BBQ sauce
  • 2 teaspoons Worcestershire Sauce
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼-½ teaspoon red pepper flakes
  • 2 tablespoons fresh parsley leaves finely chopped
  • 2 large eggs slightly beaten and at room temperature
  • 2/3 cup bread-crumbs (2 pieces fresh bread) or dry or 15 crushed saltines
  • 2 pounds ground chuck or a meat blend of your choosing: ground chuck, ground turkey, sweet Italian sausage, ground pork, veal
  • 1 tablespoon Country Bob’s Steak Sauce optional
  • ----------------------------
  • For the Cider Brown Sugar Glaze:
  • ½ cup Heinz Ketchup
  • 2 tablespoons cider vinegar
  • ¼ cup dark brown sugar packed

Instructions

  1. Preheat oven to 350F.
  2. Heat butter and oil over medium heat in a large cast iron skillet. Add chopped onion and sauté until translucent.
  3. In a large bowl, combine onion, milk, ketchup, Worcestershire Sauce, kosher salt, black pepper, red pepper flakes, parsley and eggs (add steak sauce now, if using). Mix well.
  4. Add breadcrumbs and ground chuck. Gently mix to blend. *It is important to NOT over-work the meatloaf mixture. Mix it just until mixture holds together and can be shaped.
  5. Shape the meat mixture into one large or two smaller loaves and place them back into the skillet to cook.
  6. Spread sauce (reserve ¼ cup) evenly over meatloaf.
  7. Transfer skillet with meatloaf to preheated 350F oven and cook 45 minutes.
  8. After 45 minutes, pour reserved ¼ glaze over meatloaf and cook another 15 minutes or until internal temperature reaches 160-165F.
  9. Remove meatloaf from oven and turn oven to broil. Place meatloaf under broiler just until sauce caramelizes a little, 1-2 minutes. *Watch closely.
  10. Remove meatloaf from oven and let rest 5 minutes before slicing.
  11. Enjoy!
