Is anybody else singing “Celebration” by Kool & the Gang? I don’t understand it myself except that dessert bark looks like a celebration-in-a-pan and makes me want to party.   Keep in mind – my type of partying could be much different that your own.

That was fun, but slow down for just a moment, Johnny Castle, and I’ll tell you how this party-in-a-pan came to be.

Simply SatedI had been planning to make some kind of “bark” candy, and when I discovered Junior Mints Peppermint Crunch at the grocery store, I decided to make it the star in my recipe. By the way, this is not a sponsored post for Junior Mints (darn-it!)

I knew Peppermint Crunch would taste great with white chocolate, so all I needed was salt to balance the sweetness and a crunch to keep things interesting.  Pretzels, of course!!

Simply SatedFirst, melt the white chocolate and pour it over a parchment-lined, rimmed baking sheet. Sprinkle the chopped (and not) Peppermint Crunch, chopped pretzels and crushed peppermint candy evenly over the melted white chocolate. Press the toppings into the white chocolate so they stick and stick out a little then let the whole thing cool off until hardened.   That is pretty much all there is to it.

Peppermint Crunch Bark

White chocolate, Peppermint Crunch candy, peppermints & pretzels. Once you taste it, you'll want to celebrate.

Ingredients

  • 12 ounces Ghirardelli Melting Chips or good white chocolate melted
  • 1- tablespoon vegetable shortening melted
  • 1-2 3.5 ounce boxes Junior Mints Peppermint Crunch candies, (½ chopped, ½ whole)
  • ¼-½ cup peppermint candy crushed
  • 1-1½ cups chopped stick pretzels.

Instructions

  1. Line a 12x25 (ish) rimmed, baking sheet with parchment paper.
  2. Melt the Melting Chips per package directions.
  3. Pour melted white chocolate onto the parchment-lined baking sheet.
  4. Sprinkle the chopped Peppermint Crunch candy, crushed peppermints and chopped pretzels evenly over the melted white chocolate.
  5. Strategically place the whole Peppermint Crunch candies on top.
  6. Firmly (but gently) press the candy and pretzels into the white chocolate so the toppings stick into and stick-out of the white chocolate.
  7. Let the bark cool on the kitchen counter for 15 minutes, and then place it in the fridge until hardened for 30-45 minutes.
  8. Once the bark has hardened, break it apart, place it in an airtight container or Ziploc bag and keep in a cool, dry place.
  9. The bark will keep for a month
  10. Enjoy!
