Peach Shortcake. I’m movin’ to the country, and I’m movin’ to the country for one purpose.  I’m gonna eat me a lot of peaches. This song by the Presidents of the United States of America rewinds in my head all during peach season. I can’t help it.  Thank goodness it is a happy little tune and I don’t mind.

I’m so glad fresh peaches are only available one month each summer. If they were available all the time, it would be no big deal to eat one – they wouldn’t be special. It would be like eating an apple. Please don’t get me wrong, I love apples, but eating one does not denote a special occasion.

I relish a great peach. Do you know the kind of peach that is worth relishing?  The kind of peach that makes eating it a big deal. The kind, when you take a bite, its juice gets all over your face then trickles over your chin and down your neck. And while that is happening, more juice drips through your fingers and winds its way south to your elbows and drips onto the ground creating a peach juice pond for the ants to enjoy. Did I really just write that? I need a peach and I need one now!

My granddaughter has had the experience. On her first birthday, she was handed a fresh peach. While holding it with both hands, she took a huge bite and didn’t come up for air until all that was left were the pit and the sad look on her face because it was all gone. I understood her disappointment.

As a child, my parents took my sisters and me to Stephenson’s Orchard in Independence, Missouri to pick fresh peaches. It was so much fun picking peaches straight from the trees. I can remember picking out the perfect peach the second they became ours then eating it in the car on the way home from the orchard. I also remember my parents cautioning me to be careful not to get peach juice all over the car. I solved that problem by letting the juices drip all over my clothes. I haven’t tasted such sweet and juicy peaches since Stephenson’s sadly closed their orchard gates several years ago.

Peach season is short and peach beauty and sweetness is fleeting so be prepared with your favorite recipes when it does come. Two great peach recipes are Simply Sated’s Butter Pecan Peach Ice Cream, Summer Fruit Bruschetta by The Cookie Rookie and Peachy-Keen Grilled Peaches, but my favorite – my all-time favorite is this Peach Shortcake. After serving Peach Shortcake using Perfect Shortcake, my husband declared his love of peach shortcake is now greater than his love of strawberry shortcake.  I have experienced the same conversion.

This Peach Shortcake has everything that sends it to the top of the shortcake charts: a tender cake that is crispy on the outside, juicy sweet peaches, hints of almond, vanilla and cinnamon. If you want to take it way over the top – add a scoop of Homemade Vanilla Ice Cream and top it all off with freshly whipped sweet cream. Oh. My. Gosh!! No other shortcake can beat this.

Yep, I’m movin’ to the country, I’m gonna eat me a lot of peaches, and I’m taking my granddaughter with me.

Peach Shortcake

This Peach Shortcake will quickly become a family favorite when made with Simply Sated's Perfect Shortcake.

Ingredients

  • 6 Perfect Shortcakes - http://www.simplysated.com/perfect-shortcake/
  • --------------------
  • For the Topping:
  • 3 fresh peaches – peeled sliced or diced
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon Amaretto or Frangelico – optional. If using delete almond extract.
  • ---------------------
  • For the Whipping Cream:
  • ½ cup Heavy Cream
  • 1 teaspoon vanilla coffee flavoring or ½ teaspoon vanilla extract and 1 tablespoon powdered sugar.

  • Homemade Hot Fudge – or Chocolate Sauce - optional - http://www.simplysated.com/homemade-hot-fudge-sauce-frangelico/

Instructions

  1. For the Peaches:
  2. Prepare the peaches at least 30 minutes to 2 hours before serving.
  3. Place peeled and cut peaches in a small mixing bowl.
  4. Add sugar, vanilla, almond, cinnamon and amaretto (if using) and set aside.
  5. Let the peaches soften in the sugar mixture (macerate) for at least 30 minutes and up to 2 hours ahead of time.
  6. ------------------
  7. For the whipped cream:
  8. Pour ½ cup or 1 pint of heavy whipping cream in a mixing bowl.
  9. Whip the cream until soft peaks form.
  10. Add 1 teaspoon vanilla coffee flavoring (or ½ teapoon vanilla extract and 1 tablespoon powdered sugar)
  11. Beat until stiffer peaks form or until desired consistency.
  12. ----------------------
  13. When ready to serve:
  14. Place one shortcake on a small plate or in a bowl.
  15. Place a scoop of ice cream (homemade is delicious) on the Perfect Shortcake.

  16. Pour desired amount of peaches and juice over the ice cream.
  17. Top with freshly whipped sweet cream (see below)
  18. If desired, drizzle a small amount of hot fudge or chocolate sauce over the entire dessert.
  19. Enjoy!
